Vineyard and terroir
The fruit comes from ancient, certified-organic (ICEA) and biodynamic (DEMETER) vineyards on clay-limestone soils in Lazio. The vineyards lie on hillsides in the municipality of Arce, in the Liri River valley, at 150 metres above sea level.
Vinification
The grapes are generally harvested by hand in late September and vinified according to biodynamic principles. Alcoholic and malolactic fermentation occur spontaneously with native yeasts. The wine is bottled without stabilisation, fining or filtration, following the lunar calendar. Sulfur dioxide is added only minimally, with total sulfites limited to 40 mg/l.
Ageing
The wine rests for 15 months in concrete tanks before bottling.
