Grapes
The blend is described as Corvina, Trebbiano di Lugana, Syrah and Carmenère, all from local vines. Corvina contributes delicate floral aromas and acidity. Trebbiano adds elegance to the finish. Syrah brings fruit and spice notes. Carmenère provides structure and gives the wine its ageing potential.
Vinification
The grapes are harvested at optimal ripeness and macerated for 11 minutes, which gives the wine its name. The must is then chilled and moved to a stainless-steel tank to settle for 11 hours. Fermentation runs at a controlled 13–16 °C, and the progress of fermentation is monitored daily.
Tasting profile
Elegant dry rosé with delicate floral aromas, fruit and spice notes, and acidity. The finish is elegant, and Carmenère gives the wine structure.
Serving and pairing
Suited to aperitif use or to refined dishes.
Label / history
The wine belongs to the Cecilia Beretta estate, owned by Pasqua. The estate makes two ranges, "The Crus" and "The Selection", and each wine comes from grapes selected from a specific plot. The name "11 Minutes" refers to the length of the maceration.
