Vineyard and terroir
The fruit is grown in vineyards in Piedmont.
Vinification
After harvest, the grapes are pressed and the juice settles for 48 hours. Following an initial traditional fermentation, a second fermentation takes place in sealed tanks at a controlled 18–19 °C. Fermentation is stopped with about 90 g/L of natural residual sugar remaining. The carbon dioxide produced during the second fermentation accentuates the aromatic and fruity notes.
