Vineyard and terroir
The vineyards lie just south of Tuscany and receive full sun.
Grapes
Sangiovese forms the majority of the blend, with small proportions of Merlot and Colorino.
Vinification
Harvest takes place from late September to early October according to the ripening time of each variety. A small portion of the grapes remains on the vines for longer and is partially dried. After primary fermentation, these grapes are gently pressed and added to the freshly fermented wine, initiating a second fermentation that usually lasts 2–3 weeks. This ancient Governo all'Uso technique adds depth to the wine’s flavour and aroma.
