Vineyard and terroir
The vineyards stand at 450 metres above sea level on calcium-rich clay soils. The vines average 14 years of age and are planted at a density of 7,000 plants per hectare.
Grapes
Petit Verdot and Cabernet Franc together account for no more than 10% of the blend.
Vinification
The ripe grapes are harvested by hand into 17 kg crates. At the winery, the bunches are gently pressed and the must ferments in stainless-steel tanks. Malolactic fermentation takes place in oak barrels.
Ageing
The wine subsequently matures in Allier oak barrels.
Label / history
The name comes from the countryside surrounding the vineyards, locally known as “mezzopano,” roughly meaning “food for the spirit.”
