Terroir
Lessona
The Ormeggio, Castagnola and Belvedere vineyards lie in the Orolungo area of Lessona at 290–350 metres above sea level. Their soils consist of Pliocene marine sands over igneous, specifically porphyritic, bedrock, intermingled with more recent fluvio-glacial sediments. They are strongly acidic, with a pH of 4.5–5.5, and contain available minerals and trace elements including iron, manganese, aluminium and zinc.
Brusnengo
Madonna degli Angeli lies in the Forte area of Brusnengo at 350–420 metres above sea level. Its gravelly soils rest on shallow, locally outcropping porphyritic bedrock crossed by kaolin veins. The soil is sub-acidic, with a pH of 5–6.
Vinificazione
Harvesting is carried out by hand, with the fruit collected in small boxes. The grapes subsequently undergo selection on a conveyor belt. The vineyard material represented in the cellar includes five rootstocks: 3309-C, Gloire de Montpellier, 101-14, Gravesac and Rupestris du Lot. Planting density is 5,000 vines per hectare in both the Lessona and Madonna degli Angeli vineyard groups.
Hand-picked grapes arrive in small boxes and are selected on a conveyor belt. They are destemmed and gently crushed before the fermentation vessels are filled by gravity. Fermentation is spontaneous, using indigenous yeasts, in open wooden vats. Extraction is managed through repeated punch-downs during skin maceration.
The cellar also employs extended maturation on the lees. Ageing vessels include barriques, tonneaux or other barrels, and oval 15-hectolitre casks. The wines receive further bottle ageing before release.
