Grapes
The blend combines three Lambrusco varieties with a small proportion of Ancellotta, a rare variety undergoing revival in Italy.
Vinification
The grapes are harvested by hand at the end of September. They remain in contact with their skins for 48 hours before a short maceration at a strictly controlled temperature. Alcoholic fermentation is stopped at the desired residual-sugar level, preserving bright varietal fruit and an intense aroma.
Tasting profile
Lively and intensely aromatic, with a rich palate tending towards fullness and a very pleasant aroma.
Serving and pairing
Pairs with Italian dishes and desserts.
Label / history
Cantina Puianello was founded in 1938 by five winemaking families who joined together to produce traditional wines from Emilia-Romagna. As further members joined, the cooperative’s vineyards expanded to 300 ha, 80% on mountain slopes. Following a merger with Coviolo in 2005, it comprised 398 members and 436 ha of vineyards. The winery underwent a major renovation and equipment upgrade in 2012.
