Vineyard and terroir
Spergola is a native Italian grape grown in the Colli di Scandiano e Canossa area of Emilia-Romagna, in northern Italy. Most of the Emilia wine region lies on the plains of the Po River Valley, but some of its best vineyards are in the foothills of the Apennines, near the border with Tuscany. Of the cooperative's vineyards, 80% are on hillsides.
Vinification
The grapes are harvested when they reach their ideal ripeness and sugar level. The wine follows the traditional white winemaking method. Fermentation is stopped by chilling, which preserves some residual sugar.
Tasting profile
A delicate semi-sweet white.
Serving and pairing
Suited to an aperitif. It pairs with Japanese dishes, fish, white meat and fruit-based desserts.
Label / history
Cantina Puianello was founded in 1938 by five winemaking families who joined forces to produce classic Emilia-Romagna wines. New members joined over time, and the vineyards grew to 300 ha. After a merger with Coviolo in 2005, the cooperative had 398 members and 436 hectares of vineyards. In 2012 it carried out a major renovation of the winery and upgraded its equipment.
