Vineyard and terroir
The grapes come from the winery’s organic vineyards in the Colli di Scandiano e Canossa area of Emilia, where the vines grow in clay soils.
Grapes
Spergola is a native Italian variety.
Vinification
The grapes are harvested by hand at optimal ripeness. The first fermentation takes place at a controlled temperature and is deliberately stopped before continuing in the bottle according to the Ancestrale method.
Ageing
The wine remains in bottle for at least 10–12 months.

Label / history
Cantina Puianello was founded in 1938 by five winemaking families. Further members subsequently joined the cooperative, whose vineyards expanded to 300 ha, 80% on mountain slopes. Following a merger with Coviolo, the cooperative had 398 members and 436 ha of vineyards in 2005. The winery and its equipment underwent a major renovation in 2012.
