Enantio is also known as “Lambrusco a foglia frastagliata” and is distinct from the Lambrusco grape of Emilia-Romagna.
Vinification
The grapes are harvested by hand and carefully sorted, then macerated on their skins at a controlled temperature.
Ageing
The wine matures for 15 months in oak barrels, followed by six months in stainless-steel tanks.
