Vineyard and terroir

Metafisica is produced from small vineyard plots whose grapes are brought to optimal ripeness and handled separately through fermentation and ageing. The Chardonnay comes from Montalcino. Castello Romitorio planted its first Chardonnay vineyard in the early 1990s, but the original location proved unsuitable and the Chia family replanted it elsewhere. The present tiny vineyard faces northwest and has soils rich in Galestro.

The Trebbiano Toscano comes from Località Case Sparse near Scansano in the Maremma. The parcel was acquired in November 2020 and entered the blend in 2021. Published information for the 2021 vintage describes its Procanico vines as 50 years old and among the oldest in the area.

Grapes

Chardonnay and Trebbiano Toscano, locally known as Procanico. The 2021 vintage was made in equal proportions; no proportions are given for the later 2022 vintage.

Vinification

The varieties are processed separately from fermentation through ageing. The juice receives brief skin contact, followed by gentle pressing and cooling. Fermentation begins after natural settling.

Ageing

The wine rests on its lees before bottle ageing in a temperature-controlled cellar. The 2021 and 2022 vintage notes specify nine months in barrique.

Technical data

Toscana Bianco IGT. Production was 1,900 bottles for the inaugural release identified in the 2021 review and 1,850 bottles for 2022.

Tasting profile

The wine is characterized by minerality, freshness and vibrancy. The 2022 vintage is textured and combines orchard fruit with yellow rose and baked apple-pie notes, balancing sweet and savoury impressions. The 2021 vintage shows a light golden colour and a viscous appearance, with a creamy, medium-weight palate. Orchard fruit, baked pear, saffron and apple-pie aromas are joined by perceptible skin-derived texture, a slight tannic touch and a dry, dusty-mineral finish. A second published 2021 assessment describes floral notes, white nectarine, golden apple, crushed almond, praline and dried lemon peel, followed by a sleek, juicy and citrus-led finish. The 2020 assessment notes a straw hue, apricot, mango stone, cream, lemon pith and salted almond, with a medium-to-full body, oily texture and layered palate.

Serving and pairing

The 2022 vintage has sufficient sweet-savoury breadth for Moroccan chicken tagine with preserved lemon. Published assessments suggest drinking the 2020 and 2021 vintages now.

Vintage notes

Trebbiano Toscano joined the blend in 2021. That vintage combined equal parts Chardonnay and Procanico and spent nine months in oak; production totalled 1,900 bottles. The 2022 blend again united Chardonnay from Montalcino and Trebbiano Toscano from the Maremma, spent nine months in barrique and yielded 1,850 bottles.

Label / history

Sandro Chia painted the label’s watercolor specifically for Metafisica in 2020. Its imagery evokes the universe and its abstract relationship with space and time. The name and artwork connect the Chardonnay–Trebbiano blend with the long history of Mediterranean white-wine production.
