Vineyard and terroir
The vines are trained in equal proportions to Pergola Veronese and Guyot. The soils are limestone-rich, tuffaceous and clayey.
Grapes
80% Garganega and 20% Trebbiano Veronese.
Vinification
The grapes are harvested manually and undergo soft pressing, followed by fermentation in stainless-steel tanks at 18–20 °C.
Technical data
Alcohol: 12.5% vol. Total acidity: 5.19 g/L. Reducing sugars: 3.1 g/L. Available in 0.75 L bottles.
Tasting profile
Wheat-yellow with green-gold highlights. The fragrant bouquet evokes fresh white flowers, including hawthorn, elderflower, cherry blossom, iris and magnolia. Fine and persistent on the palate, concluding with almond and white peach.
Serving and pairing
Serve at 10 °C. Pair with bigoli dressed with Cantabrian anchovies, garlic, parsley and toasted breadcrumbs; linguine with lobster; warm fish starters; Catalan-style spiny lobster; or grilled turbot and squid. It is also presented as a wine for weddings.
