Vineyard and terroir
The vineyards lie at 80–300 metres above sea level, with east- and southeast-facing sites. Their predominantly limestone soils are rich in clay and stones. A maritime climate influences the vineyards, while the surrounding hills shelter them from the wind. The vines are trained using the cordone speronato system.
Vinification
Harvest begins in the first half of September. Alcoholic fermentation lasts two weeks in temperature-controlled stainless-steel tanks of 35–110 hectolitres at 30–31 °C. Malolactic fermentation follows, continuing until the end of October.
Ageing
The wine matures for 24 months in French oak barrels, one third of which are new, followed by six months in bottle. The 2017 vintage was expected to reach peak maturity between 2020 and 2040.
Serving and pairing
Two hours of decanting before serving is recommended.
Label / history
“Sassicaia” means “stony ground” in Italian, referring to the rocky soils of the Cabernet Sauvignon vineyards. The first commercial release was produced from the 1968 harvest.
