Vineyard and terroir
The grapes grow near Fonteblanda, close to the Maremma Natural Park.
Vinification
The fruit is picked slightly before full ripeness to emphasize its varietal character, usually in the first ten days of September. It is harvested by hand into small crates to preserve the grapes intact, then gently pressed and settled. Fermentation lasts 30 days in stainless steel tanks.
Ageing
The wine rests on its lees for four months in stainless steel tanks, with regular bâtonnage, followed by at least 40 days in bottle.
