Vinification
The grapes are harvested from late September to mid-October. Alcoholic fermentation takes place in stainless-steel tanks for two weeks, followed by malolactic fermentation.
Ageing
The wine matures in French oak barrels for 16–18 months, followed by a further 12 months in bottle.
