Vineyard and terroir
The organic Catarratto fruit is grown near the village of Virzi, Palermo, in southeast-facing vineyards at 400 m above sea level. The vines average 40 years old. Predominantly sandy-clay soils contribute subtle minerality and freshness.
The wider estate comprises 180 ha, including 100 ha of vineyards situated at elevations of 300–450 m on stony soils.
Vinification
Depending on the season’s growing conditions, the grapes are harvested between late August and early September. After pressing, the must ferments with yeast in temperature-controlled concrete vats.
Ageing
The wine rests for two months in concrete vats, followed by two months in bottle.
Tasting profile
The bouquet is refreshing, with a range of fruit notes. The wine has subtle minerality and freshness.
Serving and pairing
Pair with appetisers, fish, seafood and crustaceans.
Label / history
Azienda Agricola Spadafora began operating as a winery in the 1960s, when Duke Pietro Spadafora, a descendant of an ancient aristocratic family, inherited the estate. His son, oenologist Francesco Spadafora, later expanded the vineyard area significantly. Annual production is 75,000 bottles.
