Vineyard and terroir
The grapes grow at 450 metres above sea level near St. Justina church, above the village of St. Pauls in South Tyrol. The old vines are planted on easily warmed, water-retentive clay and sand soils and yield around 60 quintals per hectare.
Vinification
Only ripe, carefully selected grapes are used. The must ferments in temperature-controlled stainless-steel tanks and undergoes malolactic fermentation.
Ageing
The wine matures on its lees in stainless steel for eight months.
Tasting profile
Aromatic and expressive, with a smooth palate.
