Vineyard and terroir
The grapes grow in the foothills of the Mendelgebirge at 600 m above sea level. Deep limestone soils and a microclimate marked by sharp differences between daytime and nighttime temperatures promote the development of distinctive aromas and flavours.
Vinification
The must undergoes a slow fermentation at a controlled temperature.
Ageing
The wine rests on its fine lees in large 55 hl oak casks for 18 months.
