Vineyard and terroir
The fruit comes from the company's own vineyard in the heart of the Valpolicella Classico area, on the hills of the commune of Fumane. The soils are mainly limestone. The vineyard lies at 500–600 m above sea level with a southeastern exposure, which gives the vines plenty of sunlight. The high-altitude climate and the local soils give the wine its distinctive character and a style that is easy to recognize.
Grapes
Selected Corvina, Cabernet Sauvignon, Rondinella and Merlot grapes are used.
Vinification
The grapes are harvested by hand and carefully selected. They then dry for 40 days (appassimento) in wooden crates of 15–20 kg, in a dry, well-ventilated room. This concentrates the sugars and phenolic compounds, and the grapes lose 20–25% of their original weight. They are destemmed and gently pressed. Fermentation takes place in stainless steel tanks at a controlled 20–26 °C, with 15 days of maceration. Malolactic fermentation follows.
Ageing
After malolactic fermentation the wine ages for 12 months in new French oak barrels. After bottling it rests a further 6 months in the winery's cellars. It is bottled without filtration. For storage, the text gives controlled humidity and a temperature of 14–15 °C.

Corte Alta is a brand created by Tiziano, who works with his father Stefano under the Stefano Accordini label. It reflects his many years of winemaking experience.
