Vineyard and terroir
The vines grow in alluvial soils over a layer of gravel, topped with reddish, iron-rich clay. The Mediterranean climate, with marked temperature differences between day and night, helps the grapes ripen evenly while keeping their natural acidity. Puiatti uses organic methods in the vineyard to preserve the variety's authentic character as fully as possible.
Grapes
The wine is made from three Pinot Grigio clones.
Vinification
The grapes are harvested entirely by hand during the middle ten days of September. After careful sorting and pressing, the must ferments at a controlled 14–16 °C.
Ageing
The wine ages in steel tanks for 4 months, then is bottled and rests before release. Puiatti never ages its wines in oak; all its wines are fermented and aged only in steel, cement or ceramic tanks.

Suited to seafood salads, fish dishes, pasta, risotto and boiled meats.
Label / history
Puiatti's motto is "Save a tree—drink Puiatti". Father and son Vittorio and Giovanni Puiatti approached winemaking with the environment in mind, as well as business and passion. The winery is now part of Tenimenti Angelini.
