Vineyard and terroir
The Sangiovese Grosso grows in young vineyards on the southwestern slope of Montalcino, where the influence of the sea and a Mediterranean climate shape the growing conditions. The fruit comes from three of the estate's historic vineyards. The vines are 7 to 15 years old, averaging 10 years, and are farmed with regenerative viticulture to keep the soil healthy and resilient. The soils are sandy and drain well, which helps the vines grow in balance. Planting density is 5,000 vines per hectare, with yields of up to 75 quintals per hectare.
Vinification
The grapes are harvested by hand, which allows the best berries to be selected. Fermentation lasts 15 days in 150-hectolitre stainless steel tanks, at a controlled temperature no higher than 30 °C.
Ageing
The wine ages for 6 months in 50-hectolitre Slavonian oak barrels, then rests at least 3 months in bottle.
