Vineyard and terroir

Suòlo 5 comes from Soil No. 5 at Tenuta Risignolo. Zibibbo is grown here on the estate’s fertile hills in soil rich in clay and limestone. The parcel and fruit were selected by the agronomist and winemaker. Every bottle is individually numbered.

Vinification

The hand-picked bunches arrive in 4 kg crates transported by refrigerated lorry and are sorted on a conveyor belt. After destemming, the berries are gently crushed and softly pressed, with approximately four hours of skin maceration. The must settles in stainless-steel tanks at 14°C for 16–20 hours. Fermentation of the clear must begins after static settling; at around 3% alcohol, it is transferred to fine-grained, lightly toasted oak barriques to complete fermentation.

Ageing

The wine remains in barriques on lysed yeasts for at least seven months, developing a rounder, more supple palate. It then ages in bottle for at least six months before release.

2021: 12.8% vol.; total acidity 5.9 g/L; pH 3.12. Format: 75 cl.

Tasting profile

Straw yellow with greenish tinges. The nose combines floral aromas, tropical fruit and Sicilian citrus with orange blossom, Mediterranean scrub and hydrocarbon notes. The palate is dry, fresh, distinctly characterful and pleasantly tangy and savoury.

Serving and pairing

Pair with fish starters, raw seafood, fish-based first courses, grilled red tuna, fish roe and sea urchins.

Vintage notes

Temperatures during 2021 were above the seasonal average. A rainy winter was followed by a very dry spring and summer. After an extremely hot start to summer, cooler weather from early August supported the vines’ vegetative cycle and allowed the grapes to ripen well. Harvest took place by hand on 25 August 2021.
