Vineyard and terroir
The grapes come from vineyards around Torrecuso and Foglianise in the province of Benevento, at 400 m above sea level. The soils are rich in sandy clays, quartz sandstone and fossil deposits. The plantings date from various years beginning in 1970 and are trained to both Guyot and spur-pruned cordon systems, at a density of 3,000 vines per hectare. Integrated, low-environmental-impact viticulture is practiced. Wine yield is 6,500 litres per hectare.
Grapes
100% Aglianico.
Vinification
Harvest takes place during the final ten days of October. The grapes are destemmed and crushed, followed by cold skin maceration. Fermentation proceeds at 26°C for approximately 20 days. The wine is then drawn off and completes malolactic fermentation.
Ageing
Maturation begins in stainless-steel tanks and includes a passage through traditional casks, followed by approximately three months in bottle.
Tasting profile
