Vineyard and terroir
The grapes are grown in vineyards in Salento.
Vinification
Selected grapes are crushed and destemmed. Maceration and fermentation take place at a controlled temperature of 22–26 °C for 8–12 days. The wine is then separated from the skins and pulp by gentle pressing.
Ageing
Before bottling, the young wine rests briefly in stainless-steel tanks.
Label / history
The label was inspired by the rose windows of local churches in Puglia.
