The grapes are grown in Salento.
Vinification
The grapes are harvested by hand in mid-September, then crushed and destemmed at the winery. Fermentation and maceration take place at a controlled temperature of 22–26 °C for 8–10 days.
Ageing
The wine rests in 10–20 hL barrels.
