Vineyard and terroir
The Aglianico comes from sunny slopes in Puglia, in southern Italy.
Vinification
The grapes are harvested by hand in the second half of September, at ripeness, when the berries reach their highest concentration of aromas and tannins. They are crushed and destemmed, then fermented at 22–24 °C with 8–10 days of skin contact to extract colour.
Ageing
The wine is aged briefly in stainless steel tanks, which lets the fresh, rich aromas develop.
Tasting profile
Deep garnet colour. Rich aroma, with smooth, enveloping notes of red berries. Full-flavoured and well structured; rich, vibrant and expressive.
Serving and pairing
Pairs with hearty, flavourful first courses, red meat, and medium- to well-aged cheeses.
Label / history
Cantine San Giorgio is a range of wines named after great thinkers and philosophers. Erodoto refers to Herodotus of Halicarnassus, the ancient Greek historian and author of "The Histories", the first surviving major treatise, which describes key events in the domestic political history of the Greek city-states.
