Vineyard and terroir
The Negroamaro grows in Cantine San Giorgio's vineyards in the province of Taranto.
Vinification
The grapes are harvested by hand, then crushed and pressed. The must is macerated and fermented for 10–15 days at a controlled temperature of 22–26 °C.
Ageing
The wine ages for 6–12 months in French and American oak barrels.
Label / history
Cantine San Giorgio is a range of wines named after great thinkers and philosophers. "Lattanzio" refers to Lucius Caecilius Firmianus Lactantius, a rhetorician and writer from Africa who converted to Christianity. His works are notable examples of late antique literature.
