Vineyard and terroir
The grapes grow in Cantine San Giorgio vineyards in the province of Taranto.
Vinification
The grapes are harvested by hand, then crushed and pressed. Maceration and fermentation take place for 10–15 days at a controlled temperature of 22–26 °C.
Ageing
The wine matures for 4–8 months in 10–20 hL barrels.
Label / history
The Cantine San Giorgio range takes its names from great thinkers and philosophers. Polibio refers to Polybius, the ancient Greek historian, military commander and statesman who wrote the 40-volume The Histories.
