Vinification
The grapes are harvested by hand in early October, then destemmed and gently pressed at the winery. Maceration and fermentation take place for 8–10 days at a controlled temperature of 22–26 °C.
Ageing
The wine matures for 6–8 months in 5–20 hl barriques.
