Vineyard and terroir
The grapes come from vineyards in Salento, in the south, where sunshine and sea air shape the fruit.
Vinification
The grapes are hand-picked in the first half of September at optimal ripeness. At the winery they are destemmed, then macerated and fermented at a controlled temperature, which preserves the pure fruit character and soft tannins. The wine is pressed gently.
Ageing
The wine ages for 4 to 8 months in barrels of different sizes, gaining roundness, depth and subtle spicy notes.
Tasting profile
Expressive, rich yet balanced, with juicy fruit and structure in harmony. The tannins are soft and the fruit pure. Ageing adds roundness, depth and subtle spice.
Serving and pairing
Pairs with Southern-style dishes: pasta with rich sauces, grilled meat, roast lamb, vegetables with rosemary and aged cheeses.
Label / history
The Cantine San Giorgio range is named after great thinkers and philosophers. Strabo was an ancient Greek historian and geographer, author of the 17 books of "Geography", which taught the world a great deal about the geography of the ancient world.
