Vineyard and terroir
The Merlot and Corvina are grown in the company's own vineyards on the sunny side of the hills near Lake Garda. The vines are 50 years old on average.
Vinification
The grapes are picked by hand in the morning at the end of September. They then undergo appassimento (drying) for 100 days.
Ageing
The wine spends 12 months in Slavonian oak barrels, followed by a further 6 months in French oak barriques.
Label / history
"Uomo" means "Man" in Italian, and the wine takes its name from this.
