Vineyard and terroir
The vineyards lie on hills in the province of Taranto.
Vinification
The grapes are harvested by hand in the first week of September. They are pressed and destemmed, then fermented at 22–26 °C for 8–10 days.
Ageing
The wine ages for 6–8 months in barrels of 10–20 hl.
