Vineyard and terroir
The grapes grow in Puglia in southern Italy, where a long Mediterranean coastline and warm climate accompany poor, sun-scorched limestone soils.
Vinification
The grapes are harvested at optimal ripeness. Traditional vinification begins with fermentation at 24–28 °C. Pump-overs take place daily during the first week and every two days during the second. After alcoholic fermentation, the wine is racked and undergoes malolactic fermentation, followed by a further two or three rackings.
Ageing
The wine is aged partly in 500-litre oak tonneaux and partly in large 6,000-litre barrels.
Tasting profile
The aroma is layered and spicy. The palate is rich, harmonious, smooth and enveloping.
