Vineyard and terroir
The grapes are harvested in the province of Chieti, from the slopes of the Apennines and Gran Sasso. Pecorino is a traditional Abruzzo variety, grown there since ancient times.
Vinification
The grapes are crushed and pressed by traditional methods, followed by about 4 hours of skin contact. They are then gently pressed, and the must is cooled and left to settle. Fermentation at controlled temperature lasts about 10 days.
Ageing
The wine spends an extended period on the lees, then is racked and bottled. It rests briefly in bottle.
