Vineyard and terroir
The fruit comes from 30-year-old vines in a vineyard in Controguerra, cultivated using organic methods. The site has distinctive soils and climate.
Vinification
The grapes are harvested by hand between 5 and 15 October. Low-temperature skin maceration and fermentation take place entirely in temperature-controlled stainless-steel tanks.
Serving and pairing
Pair with mushrooms, vegetables and fish.
