Vineyard and terroir
The Pecorino grows in vineyards with clay and sandy soils.
Vinification
The grapes are harvested by hand in September. They are gently pressed at the winery and the must is left to settle statically. Fermentation takes place in stainless steel tanks at 16–18 °C and lasts 10–15 days.
Ageing
The wine rests on fine lees in vats for 4 months.

Label / history
Umani Ronchi was founded by Gino Umani Ronchi in 1950, when he bought a large plot of land in the low hills of Marche near Cupramontana. The winery now belongs to the Bernetti family, who own six vineyards covering 100 hectares in the Verdicchio dei Castelli di Jesi Classico and Rosso Conero areas, and lease about 40 further hectares. The estate's Rosso Conero and Verdicchio wines are traditional in style, alongside experiments with Cabernet Sauvignon, Merlot and Chardonnay. Its other wines include Rosso Conero San Lorenzo and Cumaro, and Verdicchio Casal di Serra and Villa Bianchi.
