Vineyard and terroir
The vineyards lie around 100 m above sea level on soils dominated by white pebbles. The soil structure allows oxygen to reach the roots, which grow very deep.
Vinification
The grapes are harvested at optimal ripeness and undergo traditional fermentation.
Ageing
The wine rests in steel tanks for six months, followed by at least three months in bottle.
Tasting profile
Elegant, with ripe-berry notes and a bright, fresh, complex aroma. The palate has good acidity.
Serving and pairing
Suitable as an aperitif and with fresh or aged cheeses, assorted cured meats, Sicilian red tuna, fish soup, mullet, sushi and sashimi.
