Vineyard and terroir
The fruit comes from the "Montecitorio" vineyard, where the soils are composed of marl and chalk.
Vinification
The grapes are harvested by hand and briefly macerated at the winery. Fermentation takes place with natural yeasts at a controlled temperature of 18–22 °C.
Ageing
The wine rests on fine lees for 10 months, followed by six months in bottle in the winery’s cellars.
