Vineyard and terroir
The grapes grow on the San Castrese estate, on slopes beside the extinct Roccamonfina volcano at 200 m above sea level. The volcanic soils are rich in phosphorus, potassium and other trace elements. The oldest vines were planted in 1976 and the youngest in 2000. Planting density is 4,500 vines per hectare, with annual yields maintained at 5,000 litres per hectare.
Vinification
Primitivo is harvested from late August to early September, while Piedirosso and the other red varieties are picked during the second ten-day period of October. The grapes are harvested by hand, gently pressed and macerated on their skins at approximately 15–26 °C. Malolactic fermentation takes place in large oak barrels.
Ageing
The wine spends two months in Allier French oak barriques, one-third of which are new.
Label / history
Cecubo was valued by the ancient Romans. Villa Matilde first produced the wine in 1985.
