Vineyard and terroir
Coevo brings together two Tuscan growing areas. Beginning with the 2021 vintage, the blend focuses on Sangiovese from Villa Rosa in Chianti Classico and Merlot from Val delle Rose in Maremma Toscana. The combination joins the freshness associated with Chianti Classico to the softness and balsamic character of varieties cultivated on the Tuscan coast.
The downloadable 2015 technical sheet describes the earlier four-variety version. Its fruit came from Castellina in Chianti for Sangiovese and Cabernet Sauvignon and from Maremma Toscana for Merlot and Petit Verdot. Average elevations were 250 m and 200 m respectively. Castellina’s soil was a medium-textured alkaline mixture, while the Maremma sites featured feldspathic quartz sandstone with a substantial stony component. Planting density was 5,000 vines/ha, the vines were trained to spurred cordon, and yield was 4.5 tonnes/ha.

Blend proportions vary by vintage. The latest published vintage, 2022, is based on Sangiovese and Merlot; exact percentages are not given.
Vinification
For the 2015 vintage, alcoholic fermentation took place in stainless-steel tanks at 25–30°C and finished in contact with the skins. Every variety underwent two weeks of maceration.
Ageing
The 2015 wine matured for 18 months in barriques and tonneaux, followed by more than 12 months in bottle.

Tasting profile
Coevo 2022 is complex and generous, with dark-fruit aromas framed by toasted and spicy nuances. The palate is balanced and structured: ripe tannins form a silky, enveloping texture, while vibrant freshness underpins its capacity for extended ageing. The blend combines Chianti Classico freshness with the softness and balsamic expression associated with grapes grown on the Tuscan coast.
Serving and pairing
Serve at 10–12°C. It can be enjoyed as a contemplative or collector’s wine and paired with game, red meats, substantial pasta dishes, aged cheeses and other rich, complex dishes.
Vintage notes
The 2022 Tuscan growing season was notably balanced. Abundant spring rain supplied water reserves for the following months, after which a cool summer brought occasional rainfall. Temperatures rose above the seasonal average in June, but rain in early July returned them to conditions associated with milder summers.
The wine’s composition has evolved: the downloadable 2015 sheet describes a four-variety blend drawn from Castellina in Chianti and Maremma Toscana, whereas from the 2021 vintage onward Coevo concentrates on Sangiovese from Villa Rosa and Merlot from Val delle Rose.
