Vineyard and terroir
The fruit is grown at the Vigna La Rivetta estate in the heart of the Cartizze area, between Santo Stefano and San Pietro di Barbozza in the municipality of Valdobbiadene. The estate’s vineyards cover 106 hectares. The site has a gentle microclimate and very ancient soils composed of calcareous sandstone and clay.
Vinification
Whole bunches are gently pressed in a pneumatic press. After the first racking, the must is transferred to temperature-controlled tanks and held there until sparkling-wine production begins. Special yeast cultures selected by the Villa Sandi winemakers are added, and fermentation takes place in vessels at a controlled 15–16 °C. Fermentation is stopped by cooling once the intended alcohol and sugar levels have been reached. The wine settles briefly before bottling.
