Vinification
The grapes are harvested by hand. Vinification begins with five days of maceration at 5 °C, followed by fermentation for approximately two weeks. Half of the must ferments in contact with the grape skins and half without them; the two portions are then blended.
Ageing
The wine matures on its lees in concrete tanks for one year.
