Vineyard and terroir
The fruit comes from the estate’s 20 hectares of vineyards in San Gimignano. The vines have an average age of 20 years.
Vinification
The grapes are harvested by hand and gently pressed. The must ferments in stainless-steel tanks with selected yeasts at a controlled temperature of approximately 18 °C.
Ageing
The wine matures for six months in stainless-steel tanks and oak barrels.
Tasting profile
Refreshing, with a light almond bitterness on both the nose and palate.
Label / history
Monte Oliveto Abbey was built in the 14th century by Olivetan monks, also known as the Order of Our Lady of Mount Olivet. The estate has belonged to the Zonin family since 1980.
