Grapes
The Glera grapes are selected for their character and freshness.
Vinification
The grapes are pressed very gently. Half of the must undergoes an initial fermentation at a controlled 18 °C, while the other half is held unfermented at 0 °C. The two portions are then blended and fermented under pressure in stainless-steel tanks using the Charmat method.
