Italian researchers use AI to map chemical changes in ageing Taurasi

The Institute of Food Sciences of Italy’s National Research Council compared four Taurasi DOCG vintages using laboratory measurements and machine-learning algorithms.

Researchers at the Institute of Food Sciences of Italy’s National Research Council in Avellino reported on 30 October 2026 that they had combined laboratory analysis and artificial intelligence to study changes in Taurasi wine during ageing. The research covered Taurasi DOCG from the 2015, 2018, 2021 and 2022 vintages.1

The team measured major chemical components, including polyphenols, anthocyanins and aromatic compounds, before applying machine-learning algorithms to the resulting data. According to the institute, this approach revealed similarities and differences among the vintages and produced a chemical map of the wine’s evolution over time.1

Daniela Evangelista is listed as the study’s first author. The findings were published in the scientific journal Metabolites within the Agritech project, funded through Italy’s National Recovery and Resilience Plan, or PNRR. The research used Taurasi DOCG, a red wine from the Irpinia area of Campania, as a case study for investigating changes during ageing.1

The institute described the work as an early step towards possible tools for wine quality control, characterization and authenticity checks. The reported method combines conventional chemical measurements with statistical learning; no readiness for routine industry use was established in the available source.1
