A Sicilian Winemaker with a Difference

COS is introduced as a Vittoria producer founded in 1980 whose wines are made with very low sulphite levels and are largely matured in amphorae. Giusto Occhipinti appears as one of the estate’s winemakers. A tasting began with red wines and moved to whites because the whites were produced in a manner comparable to reds, giving them a correspondingly distinct structure and character.
