The account returns to 1980, when Giambattista Cilia, Giusto Occhipinti and Cirino Strano leased a small holding at Bastonaca and began making wine. It emphasises their early adoption of Rudolf Steiner’s biodynamic ideas, under which soil and plant form a single system whose needs must be respected. Their work is framed as both innovative and traditional: biodynamics became a way to honour land with a long agricultural history, while the name COS was formed from the founders’ surnames.
