About this wine
Vineyard and terroir
The grapes grow in Aquila del Torre’s hillside vineyards at 175–300 metres above sea level. The vines are 14 years old on average.
Vinification
The grapes are harvested by hand into small crates, with only fully healthy bunches selected. Maceration takes place in stainless-steel tanks, followed by fermentation with native yeasts in steel vessels. Malolactic fermentation occurs in concrete vats.
Ageing
The wine ages for 12 months, developing additional complexity and a distinctive character.
