Here’s Pinot Grigio 2018

The 2018 Pinot Grigio was shaped by soils containing Eocene marl and sandstone formed through seabed uplift approximately 50 million years ago, now mixed with clay, and by breezes arriving from the Adriatic. The summer was unusually hot and picking began early, in mid-August. Regular though limited rainfall supported steady berry growth.

Warm, dry days and cool evenings allowed harvest to continue until the end of September. Grapes were selected carefully and picked by hand in several passes to match ripeness. They were softly pressed, and the must settled for 24–48 hours. Alcoholic fermentation lasted 15 days at 15–17°C in stainless steel with 10% in small barrels. The wine then remained for four months on noble lees, which were regularly resuspended.
