Quercus ilex is the Latin name of the holm oak. We have some beautiful specimens growing at the Capezzine Farm, the most majestic being the one just next to our cherished Vinsantaia. We wanted to dedicate a special wine to our beloved Capezzine Farm and we couldn’t choose anything else but the name of this immense, inspiring tree for it.
2023 vintage
The 2023 vintage will be remembered as one of the most complex and demanding seasons ever faced. The final quality of the grapes, remarkable given the conditions, only partially offsets an unprecedented loss in volume. It was a year that laid bare the fragility of our profession and highlighted the growing need to live with an increasingly structural climatic uncertainty.

Tasting notes
The “onion skin” colour is a delicate pale pink typical of Sangiovese rosé. On the nose, the bouquet of QX is complex, with light aromas of pear and grapefruit harmoniously blending with deep notes of oak, butter, and vanilla. The entry on the palate is refreshing and decisive, with the flavours perceived on the nose reappearing on the palate. The wine stands out for its savouriness and persistence, with notes of pink grapefruit and flint emerging on the aftertaste. 2023 2022 2021

FROM VINEYARD TO VINIFICATION HARVEST 4 September VINIFICATION Whole bunch press and cold decanting for about 24 hours. Alcoholic fermentation is carried out in used barriques by the yeasts selected from our pied de cuve. Pied de cuve is the first batch of grapes that is harvested in advance to select the yeasts naturally present on the skins. These will become the basic yeast for the fermentation of the grapes, which will be harvested later. This process enhances the link between the wine and its vineyard, thus sealing its sense of place. AGEING 5 months on fine lees, 80% in used barriques and 20% in second passage barriques

We wanted to dedicate a special wine to our beloved Capezzine Farm and we couldn’t choose anything else but the name of this immense, inspiring tree for it. 2022 VINTAGE A dry winter and a cool early spring accompanied the vines to budding. The abundant rainfall in April proved crucial for the continuation of the season. In fact, from May until harvesting, our vines had to go through an extremely dry summer. Their high resilience allowed them to support the grapes without high stress. Close to the harvest, we were able to benefit from a good temperature range crucial to preserving the fragrance in the wines. TASTING NOTES Complex on the nose. Notes of white flowers and vanilla alternate with hints of pear and grapefruit with a light smoky finish. In the mouth, the entry is broad, decisive and pleasant. The flavours described on the nose return. Surprising for its savouriness but above all for its interminable length. ..................................................................................................................................................... ROSATO 2021 WWW.AVIGNONESI.IT VINIFICATION GRAPES 100% Sangiovese HARVEST First week of September VINIFICATION The must obtained from the whole bunch pressed grapes is cold decanted and transferred after 24 hours. The pied de cuve is added to the must. Fermentation takes place in 225lt barriques at a controlled temperature. Thereafter, the malic acid degradation is accompanied by weekly batonnage. Pied de cuve is the process whereby a vat of grapes is harvested in advance and used to prepare a natural, vineyard-specific yeast. This will become the basic yeast for the fermentation of all the other grapes, which will be harvested a week later. By using this natural yeast, we are able to enhance the connection between vineyard and wine, which will be more representative of a specific terroir. AGEING 8 months in 225lt oak barrels on fine lees ALCOHOL AND TOTAL PRODUCTION 12,5% - 2,552 bottles Quercus ilex is the Latin name of the holm oak. We wanted to dedicate a special wine to our beloved Capezzine Farm and we couldn’t choose anything else but the name of this immense, inspiring tree for it. 202 1 VINTAGE Temperatures in early spring 2021 were higher than usual. However, no one would have expected a winter weather episode in April; frost causes substantial damage affecting the yield but, luckily, not the quality. A mild summer with generally cool temperatures mitigated the lack of rainfall. The abundant water reserves stored in the soil during the winter allowed the grapes to ripen properly. TASTING NOTES Complex on the nose. Floral and coconut notes alternate with hints of pear and grapefruit with a light smoky finish. In the mouth the entrance is broad, decisive and pleasant. The tastes described on the nose return.
